Grandma's Angel Food Cake

1.5 C Powdered Sugar
1 C Cake Flour
1.5 cups eggs whites ( a dozen)
1.5 t cream of tartar
1C sugar
1.5 t vanilla
.5t almond extract
1/4 t salt


Move oven rack to lowest position and heat oven to 375. Sift powdered sugar and cake flour 3 times. Beat eggs whiites and cream of tartar in large bowl on medium until foamy. Beat in sugar 2 T at a time on high speed. Add canilla, almond extract, and salt with last bit of sugar. Continue beating until still and glossy. Sprinkle in flour and sugar mixture 1/4 C at a time. Fold mixture until flour disappears (do not let your spatula come of out mixture). Pour batter into angel food cake pan. Cut gently through mixture with knife or metal spatula. Bake 30-35 minutes or until cake cracks are dry and the cake is springs back. Immediately turn upside down and cool. If your cake pan does not have a stand on it, turn the cake upside down on a bottle or funnel. Allow time to cool. Loosen cake with a long metal spatual.

Caramel Frosting 
3/4 C Whipping cream
3/4 C sugar
1 T white syrup 
Boil to soft ball stage. Let cool. Stir. Pour ans drizzle over cake.
